Lemon Parsley Salmon Pasta

Ingredients

  • 450 g PARAMOUNT SALMON
  • 250 g Pasta
  • 1 tsp olive oil
  • 200 g mini tomatoes
  • 1 long red chilli ribs & seeds removed – finely chopped
  • 3 plump garlic cloves crushed/minced
  • 200 ml cooking cream
  • juice of 1 lemon
  • ½ cup parsley leaves
  • Freshly grated parmesan cheese to serve

Method

  1. cook pasta according to packet directions.
  2. Heat olive oil in a large non-stick frypan over medium-high heat, add Paramount salmon & fry for 1 – 1 ½ mins, remove to a plate
  3. Turn the pan down to medium-low.
  4. Add tomatoes, chilli & garlic to the pan, stirring for 1 – 2 minutes
  5. Add cream & lemon juice to the pan, bring to a simmer.
  6. Once simmering and cream has started to thicken slightly, add parsley and reserved salmon, stirring to combine.
  7. Simmer for 1 – 2 mins, or until salmon is heated.
  8. Add pasta to the pan, stirring to combine
  9. Serve with fresh parmesan cheese.
